Hi from the Sussex Weald

Hi All

Became obsessed with real barbecue after a few trips to Texas over the years and good to see there are a few others who think there is more to barbecue than sausages.

Had a Cheap Offset Smoker for a while, which works ok but has to be watched. Recently upgraded to a Pit Barrel Cooker and loving it. Works really well with the right meat thermometers. Got a Weber gas barbecue for weeknights too, with a Grillgrate upgrade.

Also bought myself a Steakager from the US. Good bit of kit if you have the patience.

To top it all I am slowly building a small fold (herd) of Highland Cattle - mostly for personal consumption. Working my way through the first one now which is very satisfying. It was grumpy with the kids so had to go in the freezer. Renting a bull at the moment to work on a few replacements.

Trying a leg of lamb on the PBC this weekend.

Look forward to swapping info, some tips and a few do's and don't's.

Hot coals everyone.

Had to go through their annual TB test yesterday and there was another one which was a bit tricky to handle - she suddenly began to look rather tasty as well....
Might need to upgrade the freezer capacity.
