hi

im from dublin, long time bbq-er,
back to the hobby after a few years of only a couple of bbqs a year,
currently, i do pulled pork, ribs, pigs in blankets etc
on my offset smoker (that aldi one, although modified!)
and do indirect/direct on a my huge odd oval kettle, its a huge cooking surface
that is the workhorse, its really old and the legs are giving up
but im hanging on to it as long as i can, it has a door in the centre of the cooking grate
which is great for firetending, , its versatile due to its size,
i used to have a class stainless steel diy oversized WSM copy but my interest wained
and it was chucked, id love to have it now!
im doing a UDS build and am interested in a bit of relatively local perspective!
all the uds talk is very much american, im already struggling to find handles here in ireland!
