gonna smoke a bit of pork that i had in the freezer on mon

think its a roll of pork i dont konw all i know is that its gonna taste GOOOOOOOD

have given it a wash, patted dry and librilly coverd in seasoned pioneers cajun spice rub

also did my first injection today as well

2 table spoons lee n perrins
1, 1/2 table spoons ofapple cider
3 table spoons of farmhouse cider
lil bit of water
and of course half a tea spoon of the rub

once id done that a bit of extra rock sea salt in the fat
then i wrapped that bad boy in cling film then in the fridge

now roll on mon so i can crack open my maverick t73 and a beer or 2 :D

aint looking to bad over here but if it starts peeing it down

ill drag the bbq to the car port :D

coals are on

gonna try the minion method, will that be alright with big k lumpwood charcoal or will it taint the meat

got the maverick out as well think i got it set up right, i hope so as i want a trouble free cook as im hanging this morning
had a good nite out though..

Should be fine only the most sensitive pallet can normally taste the difference between all lit and the minion method, only thing to avoid is easy lighting charcoal impregnated with lighter fluid, it should tell you on the bag

all systems are go

just started spitting with rain so have covered the t73 tx up..

big discrepency between the lid thermonmeter and the t73

t73 reads bbq temps sat at 207F, lid says near 300F

think i believe the t73
