First time Home cured Bacon

Postby jay75 » 27 May 2012, 16:47

I have been wanting to try curing my own bacon ever since getting my BGE, this thing smokes sooo good! Thanks to my butcher who gave me his own home made sweet cure, I set about making my first lot of bacon, this process is far from difficult or time consuming, I know, if I didn't have a good source of a cure it would be a little harder but there are places to get the pink salts from off the tinterweb, seriously though this was the best bacon I've ever tasted! If you can, I really recommend that you try to make your own!

Like the sound of this - any more details? How long do you have to leave in the cure? Did you hot smoke? Cheers, Simon

I rubbed the cure on pretty heavy and put it into a food bag, left in the fridge, turned it over each day for 7 days then hot smoked at about 225-250f for about 3.5 hrs till 150f then in the fridge overnight, slice and cook yum! only thing that I would like to have is a good meat slicer, but it was so good as thick cut I won't hesitate to repeat.

P.S I did give it a good rinse off after curing, before the smoke of whiskey oak
