Brined Pork hocks

Postby aris » 09 Nov 2012, 18:49

Any ideas here? Saw these at the butchers, and they spoke to me (particularly at £2.50 each) :-)

I was thinking to brown them in the oven for an hour, then braise for several more. As thy are brined, I'm essentially going o have ham at he end of this. Mi was thinking this might be a good base for some Boston baked beans, or a ripe li the out boys did recently Rednek beans http://bbqpitboys.com/recipes/redneck-beans

Anyone cooked these before?

I've used them to flavour pease-pudding nothing more exotic then that, sorry.
