Have posted this on another site, but thought I would post it here too.

Baby backs with a decent amount on them are pretty hard to come by here in Aus. Braved the madness that is the only Costco in NSW as I heard they have a good selection of meat. It was worth it (just). :D

Trimmed up the ribs kind of St Louis style. Did one with Mad Hunky General Purpose rub, the other naked. Did them 3-2-1(in the foil with some apple juice). Basted the MH ribs with Rendezvous sauce for the last hour and added the Rendezvous dry rub to the naked one when done. Smoked them with a combination of Black Wattle and Cherry wood. Used a mixed heatbeads and coconut charcoal snake. Best ribs I have made, and some of the best ribs I have ever had.

Trimmed (to my version of St Louis style :D ) and on the weber (thought id cook the offcuts too - waste not want not).

I threw some ABTs (with haloumi cheese) on the OTS as an entree (but forgot to add the wood!)

Very happy with how they turned out. Good enough to entice me back to Costco (that and the Tri-Tip :D ).
