I've used two cuts for PP from my local butcher and they're usually a little unsure of what to charge when I ask for a specific cut. The cheaper of the two I regularly use is just £3.49/kg and the more expensive, which I feel is closer to a Boston butt, is about £5/kg. Both of them work equally well, but I did once get a monster cut at £3.49/kg which included some spine and ribs, but the money muscle was there
We have a hard life up here, they can't charge too much or we'd starve Yeah that string is a sure sign that there's been a bit too much tampering with the cut
Ok so ordered from my local butcher with the above images saying that's what I want.
This is what I got
Looks like it was cut the wrong way? That and/or it just looks like a 2 year old went at it.
I don't think I will use any local butchers anymore. Spent loads of money for badly cut meat - I know i'ts more expensive to use the likes of T&G but they know what BBQ people want.
I got to cook and eat it any ways, so used Plowboys' Yardbird rub
Unfortunately I can't enlarge the pictures, but that looks like a very nice lump of meat to be fair I think I spy the money muscle in there too. I'd ask for it bones and all next time How heavy is the cut?
