Tri-tip steak

Postby GingerBen » 02 Nov 2015, 09:28

Spoke to a butcher on Sunday (at a local farm shop) and asked if they have or can do a Tri-Tip. After explaining it was the triangular cut from the bottom sirloin (i think this is right) he went to the fridge and came back with what he called wing rib. This was basically a lump of sirloin on the bone that looked nothing like a tri-tip.

After some more confusing conversation we left it there lol.

Anybody had any joy in sourcing tri-tip in the UK and if so what did you ask for?

Thanks.

Hi There

Here is the UK's Skint foodies explanation from his butcher

The tri-tip is an extension of the point end of the rump and is not to be confused with the picanha, which is the cap of the rump and connects with the silverside. Instead this muscle runs from the point of the rump and up and over the knee. In the States [it is] commonly called the sirloin fillet due to its tenderness. The tri-tip has similar flavours and characteristics to rump, but loads more marbling running through it which helps to keep the meat succulent in cooking. :D

Thanks, I'll try to describe it like that next time and see what I get! I've found an online butcher that sells tri tip so failing getting a local source I'll try one of theirs.
