First good weather of 2012 - anyone cooking?

Post by Steve »

Looks like it will be a belter today, anyone worshipping the gods of fire today?

I'm doing some hot and fast today, using up some stuff from the freezer. Got some belly pork slices, chicken livers, pork fillet and a few other bits and bobs. Going to fire up the gasser for that.

Also making a BBQ pie for British Pie Week, hickory smoked some chicken yesterday, today that's going in a pie and getting cooked on the Kettle.

Picked up a couple of small free range chickens, which will be spit roasted, probably. We also had today reserved for the "pre-season" (if there is a season ;) ) BBQ shed (large tool store NOT to be confused with a proper shed like Toby's) clean-up and arranging all the goodies I've bought since last year. All essentials of course :D

While in Morrisons on Friday, as well as the cod roe, I bought a whole turkey breast for 8 quid. Not going to do anything fancy with it, I thought put it on smoke for a couple of hours, then turn the temp up to finish it off.

Lovely and sunny here too. Took a gamble and preordered a few racks of babybacks and I'm also cooking a few chicken thighs for the first time. Plus a first attempt at home made slaw.
I will be firing the WSM up at around 10:30 and plating at 2pm.

Change of plan. Meat on at 12pm So the guest will just have to savour the smell and wait. Did a small test run of slaw and it lovely! Will check chicken thighs in a couple of hours.

We've been lucky the last few days and had great bbq weather, not that i let the weather stop me.
Friday night did some fat ribs and 2 knuckles, 5 hours smoked and 1 hour sizzle.
Last night I did BBQ bucket mussels and some plank trout.
Looking forward to a great BBQ summer.
Cheers

Plated with the chicken (which was fantastic! Used Butt Rub and will definitely be cooking these again).

My wife's friend has never experienced Q low n' slow and loved them. It is my mission to spread the good word of proper Q.
