Just a few pics from a recent holiday to Cuba, we were walking back from the beach and smell just hit you, it was amazing we didn't know they were doing a bbq so we were lucky we walked back when we did, the pork was served with black eyed beans, rice and loads of salad, and it was fantastic
Was there any rub/sauce, or was this 'just' roast pork?
Should be pretty authentic barbecue in its own way - the heritage goes right back to the original Arawak 'barbacoa' idea of cooking a whole pig slowly over an open fire.
We arrived just as they were getting ready to serve so I didn't see them basting it, but it did have a slight bit of heat to it, so I imagine it had some seasoning, but it was very good cant beat a hog roast
