So...

I have a 2kg loin and 2 racks on right now. I have added more restaurant charcoal after doing a full basket of unlit topped with half a Weber chimney of lit.. once the fireworks went out!!

It then sat at 215 for an hour - on to a winner.... then boom 200 dead for an hour... then 190.

Been reading while i cook as well as writing and had to dismantle - dump the water - foil the pan.... still around 200.

What am I doing wrong? all vents open fully!

think this may have been answered in another thread, no more than 1" boiling water if you are using it, check your thermometer, and stop lifting the lid, will take 10 mins to come up to temperature every time you lift it for a peak.
