Creamed corn

Creamed corn

Hi all,

Just started making this at home on the hob in a small pan but it will be made on the grill when i do my next Q party.

300g fresh/tinned or frozen corn kernells (i have been using frozen)
100g butter
1 garlic clove through a press
1/4 onion very finely chopped/processed
2tbs mayo (not light or extra light :roll: )
1/4pint of full fat milk
2tsp sugar
Salt/black Pepper to taste

1, melt the butter then add the onion and garlic and cook for a minute or so
2, add the corn and cook for a couple of minutes again (a little longer if it's from frozen)
3, add the mayo/milk and sugar
4, now simmer until the mixture begins to thicken
5, take the pan off the heat and with a potatoe masher mash it to create a slightly sticky consistencey but don't mash too much as to destroy all the kernells as you want some coarseness to it.
6, now put back on the heat and simmer until you get it to your prefered consistency (you could add more corn at this point too)
7, season with salt and pepper to taste and enjoy.

I have tried adding a bit of honey too but it makes it way too sweet for our taste.

I have cooked this several times now and my lot love it.
It doesnt take too much looking after and i recon that done on the Q will be even better with the addition of a bit of smoke.

I've never done creamed corn but roasting whole cobs on a grill (adding smoke of course) adds distinct flavours to a salsa.

Think I'll be giving this one a try, sounds lush. Probably be adding cheese, I'm an addict, it goes on everything.....

Sounds lovely, I'll try this recipe in my next batch of cornbread, I'd been useing jolly green giant, but it's unflavoured.
