I agree Toby.
That rub is far to salty IMHO, adjusted my last lot with some ground sugar mix.
Keith let me have a mix of Butt and Jubilee which worked really well on H+F Rump steaks on the grill.

Low and slow waygu. Isn't that a little counter intuitive? Perhaps the result is absolute melt in the mouth deliciousness... Maybe a wealthy sponsor required to test that out though.. I've been lucky enough to have a few kilos of waygu bought for me to cook one night a couple of years ago. It was a rib roast. I couldn't bring myself to do anything with it but cook it nice and hot and serve it seriously rare. I'd be more than happy to do that again.

Wagyu loves low & slow, but it's the same as other beef as it's all down to which cut you're cooking. If you grill brisket like it's steak it's still going to be tough and nasty no matter how nice the meat is, but if you cook it low & slow it'll be juicy, tender and have an excellent rich flavour to it.Simple-BBQ wrote:Low and slow waygu. I've cooked a fair bit of wagyu this year in comp's and at home. I've been tempted to cook wagyu beef ribs, but even at to cost that i get them for (which is a hell of a lot less than £55 per kg) i cannot justify the extra cost. I find regular short ribs are rich enough without the added richness from the wagyu.

That's a fair point and makes sense when I think about it. Just because of the way the meat is produced, which is of course synonymous with being tender, it doesn't make the tougher parts tender by default. I can understand your point about the extra cost though. Rib eye's, I might give that a shot.
