How long will it keep?

Guys, I have a bit of a dilema. I have a few things to smoke for over the xmas period. Basically we need:

Xmas eve - 5lb Pork shoulder and a 5lb Brisket ( Pulled pork Nachos and Pulled brisket burritos )

Xmas Day - 5lb Gammon (for with the turkey, she wont let me bbq the turkey!)

Boxing day - 6lb Brisket to be sliced for a roast dinner.

Now, I have 2 weber kettes only to do this and nowhere undecover except a flimsy gazebo and the forecast for wind isnt exactly light either. Weather forecast is for good on Sunday, light rain on Monday and heavy rain Xmas eve. If I BBQ this lot on Sunday would the brisket be OK for eating on the Thurs without freezing?

Sorry, this is probably too late to advise you, but I hope you did get your smoke in on time, as it would be fine to keep, tightly wrapped, without freezing, for up to a week. However, light rain shouldn't put you of a barbecue, especially if you have a gazebo! Wind is your main enemy, it can cause spikes and drops in temperature at a moment's notice.
