We're going away boxing day morning very early so anything i cook needs to be eaten xmas day and as she's working xmas night i'll be at home with my kids and there's no way I'm eating nearly a whole ham

In case it comes up again, 6kg cold smoked uncooked bone in gammon was in the smoker nearly 12 hours, though if I hadn't been busy with Xmas day it would have come out an hour earlier.
I can thoroughly recommend double smoke gammon, everyone wanted seconds and a doggy bag.
