I'll be cooking our rib of beef on the wsm, won't be smoking it though as I don't think the flavour goes with a traditional roast, just low n slow until medium rare.

We did hot smoked salmon on the smoker last Christmas. Flaked onto a bed of rocket with homemade aioli
