3lb Brown Trout

Caught a trout last night.

Filleted it and brined for 45mins. Then rinsed and dried with paper towel before sprinkling with a herb mix and cold smoking in my WSM for 2.5hrs.

Removed from WSM and baked in oven at 105c for an hour. It was awesome :P

I have several chunks of trout in the freezer that I'm not sure what to do with.

I like lemony and spicy, would lemon lime chilli work with trout? Not had a great deal of it to know.

Smashing, thanks Braai.

I made a nice little concoction up tonight that was good on cod.

Unfortunately I kinda forgot it was skinless cod so was a nightmare move. Tasted great though. :)

Got the ideas together and the taste is fab, just need to work out the application of it now. Lol.

Cod isn't a very oily fish, so I'd sit it on oiled foil. Even if it sticks a bit, you can flip it over and peel the foil off. Failing that, put it on a metal tray. You'll still get a smoke on the three sides that aren't touching metal.
Or skewer it, and be ultra gentle with it once it's cooked.
Or skewer it and give it a sticky glaze so it holds together.....

Hi Lord,

Yes, I'll make a little foil square up to put it on next time.

I'm not sure about my sauce though. It was great uncooked, so might make a marinade and a dressing. It lost some of the oomph after cooking.

I think simple is best with white fish like cod. Olive oil, lemon juice, fresh thyme and salt and pepper. Hot smoked with a little apple wood :P

I didn't smoke it at all, it wad just a quick test. I had 30mins to prep, eat and tidy up after! Had people viewing house. Mrs got it in her head she wants to move. :(
