Hi Steve, still not had chance yet mate, had to work all day yesterday (Saturday) from 07.30 until 21.30 last night and its snowed and rained all day today so Im well hacked off. :(

Finally got it lit ( minion method ) with some cheap charcoal at 6 o'clock tonight, its really cold outside and I've just reached 225, so I've half closed my vents to see what happens for the next hour :)

HIya mate, i'm just burning it in, getting ready for weekend. Fancy doing a brisket as i've never cooked one before and i'll probably throw some chicken thighs on too just in case it goes wrong :lol:

Hi Mate, I last looked at it at 11 oclock last night and it was still bang on 225,so i'm well happy. Bookers had some decent sized briskets in last weekend and ive rang a local butcher today but he told me he doesn't have a lot of call for brisket so it looks like Bookers will have to do for now.

Can I suggest you ask your local butchers if they get their meat by the side/body i.e. on a carcass or pre prepared in boxes. If you have the option go for butchers who still deal with whole carcasses as they generally have more flexibility and choice. If you are lucky enough to have a Bookers or other card then that's the place to go for convenience.

Yeah I know the problem with Cash & Carries/Shopping Clubs, still I'd suggest ringing around a few butchers and asking if they get pre packaged meat or on a carcass.

Booker cards are a piece of the proverbial to get. I have one and I don't run a business. I am fairly good at deception mind you ;)
