Not done too many sauces but could it be the quantity of sauce they make the sheer amount in one batch could that affect the flavour? Are there any preservatives in the commercial products? Just throwing these in :oops:

Yeah, in fact I've often used economy brand ketchup and then increased the level with tomato paste. I find Asda's smart price ketchup to be the least tomatoey tomato product I've found :lol:

Is the Bodeans sauce available anywhere other than in the restaurants themselves? I'd like to give it a try.

Must be an Asda's thing, I decanted their Bourbon sauce and accidently gave it to a mate who hates the taste of bourbon and he liked it. :?

I don' like thickeners such as xanthin gum or corn starch in any sauce [ including gravy] so none of these store bought sauces suit me and I thinkit has added liquid smoke as well so I'm not a fan

I've had the Bodeans Hickory sauce in the past and it's got a very strong Liquid smoke taste, i prefer the chipotle one they do.

Although one thing i've been playing with recently is powdered smoke which i find has a more rounded smoke taste to it, instead of the bitter taste you get if you add too much liquid smoke.

Okay I can understand how they make liquid smoke, is powdered just that liquid dessicated?

Anyone made a good TGI JD sauce yet, americansweets.co.uk aren't selling it anymore :cry:
