Want to cut the point off and make decent burnt ends but should I let it sit and cool first or cut it off straight away and slap it back on the grill? Oh and I am guessing unfoiled?

trimmed off the point and chucked it back on the Q then left the flat to rest and am happy to say that this is the best brisket I have produced ever;
