I always trim down bellies for ribs when i get them for home or comps. If you are looking for fall off the bone, this is achieved by over cooking them, therefore when they are foiled leave them in for another hour or until they are really floppy when you lift one end

Yeah I trimmed them a bit and then cooked 3 hrs before foiling (with a light spray of apple juice and brown sugar ) then left them for 2hr45mins (checked after 2hrs and they weren't ready). Took ~ 6hrs 15mins in total and results were my best batch yet but maybe a bit
too fall off the bone;
