I've just done a day a BBQ (grilling) cook school which give me a good grounding but I'd like to know some more.

Ha! the last time I tried trimming brisket in front of people was in Kansas, nearly chopped my bloody thumb off...had the paramedics round and everything.lol

A handy tip for other team lackies though - The severing (or part-of therin) of any one of your digits during prep automatically qualifies you for a hours rest and moderate amounts of sympathy from some (not all

) of your fellow team mates.

Boot camp sounds like a great idea, I am still a newbie and consider myself with much to learn. I will see how I get on in August but always happy to learn more.
