What's everyone cooking/cooked this weekend

Sure the sear is just for the skin? The skin did come out rubbery but I didn't care about the skin, just wanted nice lamb tasting meat. But was bland instead

And I think/guess it was British lamb

Just got back from teaching a bbq class in Germany so completly q'd out! On the menu was 2 x wagu briskets, 2 different breed pork butts to see how they compared, 4 racks of ribs and a load of chicken. Everything cooked low and slow on wsm's between 205 and 275 although did one brisket hot and fast, 350f for 5 hours, bloody lovely!

Wow that is a lot of q'ing!
Just finished eating my lamb. Turned out lovely. Next time I probably won't bother sitting it in red wine and veg and just let it sit out and get a nice bark! Lovely with some new potatoes and tomato basil salad!

With lamb I always go for a decent seasoned salt, see if you can get hold of Lawrys salt for example

I bought a digiq x2 from battlebox and they chucked in some seasoning salt so will give it a go next time cheers.

Not sure what to do this weekend. Might get some short ribs and do them on Sunday. I must say that I debated whether or not to use my digiq on Sunday for the lamb and decided because it was only a 6 hour cool I wouldn't bother. I still can't get over how easy the WSM is at maintaining steady temps. I only touched the vents a few time during the whole thing. However I bought the digiq for peace of mind on overnight cooks. It does hold the temps rock solid but there's not much fun in it.
Also just on a side note. I bought 8 bags of heat beads and they are a god send. So good at steady temps, but I've found they take ages to light and bring my smoker up to temp.

I did a brisket low and slow for 8 hours (at first for me)
Smoked and grilled some chicken wings
Flattened some chicken breasts, seasoned with a bbq rub and stuck'em in a sub roll

A successful bbq'ing weekend!

Arrgh I stupidly clicked on your ribs picture, they looked great. I had the pleasure of scrolling through your other pics on photo bucket and now have a massive hankering for a fatty!
