looks like we are going for a temp of 225 ish and get the internal meat temp up to 185 - then off, foil it and then into the Igloo for an hour or 2!

My main concern is how the hell do we sleep? :?

Rule of thumb, for good pulled pork target and internal temp of 190, for brisket you want to hit 200 on the flat and 210 for the point. hope it goes well!

Good luck with your cooking tonight. Done brisket last week and took my maverick to bed with me. Wife thinks I've got a problem.

Oh, the Pro Q'll get it alright! I like mine, it just sits at temp. for a good few hours with no worries :)

MIne's out tomorrow for MOINKS and some ABTS because apparently there's a new or latest or something Harry Potter film out on bluray....pics to follow..............not of the film obviously!

Therefore, I reckon I can get these on, smoke a cigar and drink a few homebrewed Altbiers before the "Main Feature" :D :lol:

Gazeebo up, lights up, table up, beer in hand, Pro Q and chimney starter loaded and ready to go - Pork, pumped full apple juice, stock cube and rub - brisket, pumped with beer and stock............... any last min tips please for a night cook :?:

This better be worth it! :D

Not got that problem as wife cannot cook. The pro Q is out of bounds for her.

I think I will let her do the competion boxes, arranging the parsley.
