I wouldn't quite call myself a google trawler - but speak from experience. I'm an admin on the sausagemaking.org forums.
Mis-use of nitrates or nitrites can cause poisoning and death at worst, or cancer in the long term.
This is why we have Prague cures - they mix low dosages of nitrites and/or nitrates with salt. Overdosing becomes much more difficult as adding too much makes the final product too salty and unpalatable.

Not sure if a "Google Trawler" is a polite word for being called a troll

but anyhow I was only sharing my knowledge on the subject.

is that like getting both skittles down when you have a split in bowling? I wasnt pointing to anyone in particular, just making a point that everyone should post with confidence and not to worry about any errors which will inevitably happen. I have posted and been corrected on numerous occasions.

But when there are health and safety issues at stake - they really should be pointed out. It would be negligent not to.

It would help though if you were to mention how you know the risks, whether from hearsay, rumour or in your case experience from another forum
