I'm either:
A) very lucky, or
B) never experienced meaty ribs
I buy 4 racks at Costco, for about £11-12 and find them really meaty babybacks. Either that, or they aren't babybacks, hence people's complaints.
1 rack is more than enough meat for me from them. Will grab photos next time I cook them for opinion on option A or B

The problem is that to get good quality ribs is expensive as and when you can get them. As has been mentioned Costco/supermarket ribs are great for practice and trying new rubs etc. Provided you adjust your cooking times accordingly.

Rubbed up and indirectly cooked with a couple of chunks of hickory for 6ish hours, lovely job.

For some stone age reason this forum wont let you post big photos, despite most of us being on broad band now.
I made the album public so all should be able to see it.
Are you doing it wrong?
