Re: Heat issues
the clay saucer replaces water in the bowl, its purpose is to absorb heat and to smooth out the temperatures. the saucer is one of those clay/pot plant pot base trays from a garden centre, i got mine from B and Q, get one that fits in the bowl. when you are ready to cook, put the saucer in the bowl, use some heavy duty tin foil to cover the top of the bowl, wrapping it snugly over the lip of the bowl, this foil is only there to keep the saucer and bowl clean and i peel it off and throw away after use.
hope this makes sense Andy, give it a try with good fuel, nice meat, fair weather, and cold beer, winner!

Re: Heat issues
Interesting, I bought a 14" (I think) saucer that is just wide enough to sit on the water pan tabs. Think I read up on this on virtual bullet.
I wrap in foil & then sit it on the tabs, works perfectly. Can't really understand why you would put one into the water bowl.
Virtual bullet site used this method, as allows easier addition of coals on long cooks as water bowl intrudes a lot due to depth.
Mine is a 47cm WSM, so might be different on other models / sizes

Re: Heat issues
If it fits, perfect, if it doesn't like the vast majority will not, put the heat sink/diffuser/deflector------saucer in the bowl.
Re: Heat issues
Mine was a large one stocked by Wywale Garden Centres if anyone is on the lookout for one that fits.
It just holds onto the edges of the tabs by a few mm on each, sturdy enough not to drop out when moving it about. The bottom rack sits on it as its a few mm higher than the bolts but not causing an issue.
