For some reason I feel that this weekend pork feels appropriate. Something to do with our friends in Germany and what they might achieve tomorrow night? I can't put my finger on it. But I don't fancy steaks....

Change of plan - going to put it on first thing tomorrow - 6am. Found some Big K charcoal in waitrose and can't wait to try out my temperature probe!

Up at 5.30 am to set it all up pretty excited about the charcoal and the temperature probe - I feel like the pulled pork to come is just a bonus!

So about 5 hours in (it's 11:30am!) and we're in the stall at 169. My big concern is now the fluctuating temperatures - from 240 to 310 and back. The first 3 to 4 hours were stable, but it's swinging around a bit. Any thoughts? I wondered if it might be the wind. I had to top it up with a but more charcoal about an hour ago...

I'm doing pulled pork today as well. Hadn't planned to but my son requested it for today and his mother managed to find a pork shoulder at the butchers so I was up just before 6 for as well.
In answer to you temp question yes the wind can mess about with your temps. Try and keep your cooker as shielded as much as you can. Odd spikes at 310 I wouldn't really worry about.

Thanks for the tips RobinC - still learning the tricks but all experience helps!
Now at 174. No rush to eat which is nice - ideally would finish around 6 then a couple of hours in a coolbox for the final!

How did your pulled pork turn out Matsuya? The weather, here anyway, was much nicer than the forecast had us believe, I hope that same was true for you too.
