Well found out there was a bit of a nasty smash on the M3 which closed 2 lanes but happened ages before I was there so just back log of traffic, still couldn't eat anything last night though.
Thought I wouldn't eat the bacon sarnies supplied by Toby as i'd save myself for lunch, the meats needed wrapping etc first so we learnt those bits before trimming etc, my stomach was rumbling like thunder when I see the meats and the smelt them!!!
Was eating lunch and very nearly full when they brought in the ribs then the pork and said the brisket would be another 10-15mins or so. had to try it didn't I
still cant eat anything and my fridge has a lovely smell to it.
So glad I took today off to write down what I remember and to spend all day trying to find injectors, dry rub ingredients and shaker cups etc. might even go out and get me a pork shoulder
Definitely worth every penny and would recommend it to anybody considering starting up smoking bbq.

Eldest is having some friends round to play this weekend and I'm planning on having the smoker on when the parents come over to pick them up...

Just lit the coals in the starter for the WSM with a Brisket rubbed and ready to go. Got chicken thighs and ribs for Sunday.

They "Hench" but I am not sure what that actually is. Take your point though and will self censor more closely in future. Brisket looking good though.keith157 wrote:There is nowhere to post any of Harry's secrets that's why they are secretConorD wrote:Just lit the coals in the starter for the WSM with a Brisket rubbed and ready to go.
