A friend swears by coca cola marinade. I suppose the sugar helps.

There are several recipes for Gammon cooked in cola so I assume it gives a good flavour

Diet coke in a BBQ style sauce..

"diet cola, stock, passata, tomato purée, garlic, Worcestershire sauce, soy sauce and dried mixed herbs and stir well"

Personally I would never use anything Diet - those artificial sweeteners can go quite odd and bitter when heated.
