First Smoke!

So my WSM arrived last week, got it out of the box and all set up:


Mmmm, shiny!
So yesterday I did a burn to season and clean it with a view to getting it done today. Visit to the local butcher - 1 1/2 racks of ribs (just over a tenner and they were quality spares). And also a couple of chooks.
Used the First time ribs rub from Steve Raichlen "Ribs, Ribs, Ribs", and his Beer Can Chicken rubs from "The Bible" and inserted some Stella Cidre cans. All at 6.30am today.
At 1pm this was served:


All served alongside some lovely tatties that had been grown in some recycling bags in the back garden. Yummy!
Just need these bigs boys to set fruit and we'll have some really fresh chillis to use in rubs and sauces.

Only one issue,
I had a fair amount of moisture that dribbled out of one of the vents for the first couple of hours. I think it is because I got everything going, put the water pan in, then went to boil some water to put in it. Boiled water went in and let off a massive woosh of steam.
I think the steam caused a lot of moisture content on the inside of the Q, and I put the lid back on before it had a chance to evaporate.
I was pretty impressed with it overall though - nice and easy to use. I also finished the ribs by removing the water pan and grilling them directly with some sauce on them. Was pleased that I could use it like this as I wasn't sure how much heat it would have with that amount of distance but it worked great.
Really chuffed and have a load of nicely done meat to use for lunch at work!

Looks good, got my 2 new Weber's delivered as well now just wish it would stop raining up here

so I can get some smoking done.

Just got to go for it markd!
As a Scotsman down here, I am a bit more used to getting the good weather, but on Friday as it hammered down hailstones, I said to myself that I was doing the first burn on Saturday no matter what and then my first cook on Sunday.
And as I fired it all up on Saturday - it cleared.
And it did the same on Sunday.
Must be fate........or just sheer luck and bloody mindedness on my part!

Aye, it's getting to that point, the meats in, just needs prepped, wouldn't be the first time I've q'd oot in the rain or snow come to that.
