This weekends cooking!!!

It's been a few weeks since my last cook (Rudgewick to be precise :oops: ).

So i went to my butchers today thinking i'll take it easy today and just make some burgers with some good chuck steak and as i walk in i'm offered a brisket from some Dexter cows (they're a mini cow which are supposed to have quite sweet meat) they've recently got in.

So away i came with my mini brisket for £15 and my chuck steak. Burgers for tea tonight just made with the steak and a bit of salt & pepper and then brisket will be for tomorrow.

Is anyone else cooking this weekend?

Not cooked for a couple of weeks now but desperate to light up the WSM and will do before the end of next weekend, I've tried Devon Ruby Red brisket, similar sized animal, was really good quality and something different from the normal brisket.

Grilling for me this weekend: a couple of giant t bones (2.5 inches thick each) for after tomorrow's grand prix. Will do some meaty snacks for the start of the race

Normally with a full brisket i need to get 2 boards together to place it on but this one fits comfortably on one board.

Here it looks like i've got room for some ribs aswell, rather than worrying that the brisket won't fit.

I have got a sirloin joint on at the moment - just a simple garlic and pepper rub and a slow roast in the Weber. Horror of horrors! When I went to our local butcher yesterday to pick up some fresh meat there was a big sign in the door saying he is closed until next weekend as he is on holiday. I guess that is the price you have to pay for living in a village. Never mind - one of the reserve joints came out of the freezer last night.

We did a whole chicken, some thighs and some babybacks smoked with apple and walnut, plus home made slaw and new potatoes - all turned out great, and a pleasure to do without having turn in times to adhere to! :D

My weekends cooking was as follows:

5 Fatties
30 Wings
40 Legs
2kg Homemade burges
Butchers sausages.

Lots of Beer!

One headache

MMMM BBQ! left over BBQ is a perfect hangover cure.
