My family likes apple for baby backs, nice and subtle, 3 golf ball sized pieces, I tend to go for 4 hours (pass the bend test) without foil. Smoke is subjective, my advise is start with less and add more on the next cook, nothing puts other people off you food quicker (and the potential to cook for them again) than food that tastes like an ash tray!

i have never done baby bk as this is my first smoker only ribs done are the ones from asda and thrown on grill in summer
so thanks for the advice, i think i will do without the foil as there more tender than the normal ribs,
what do u do with yours JEC do u baste em with bbq s ever hr or spritze with apple juice or just leave em.

I tend to spritz or mop hourly and then glaze about 20 minutes before I take them off the smoker.
