Did some Qing over the winter using fire wood, the stuff you buy in petrol stations. (Ran out of charcoal)

It came out excessively smoky, just wonder if anyone knows what kind of wood they tend to use in these bags?

They use soft woods like pine as it's cheap.

A friend of mine made this same mistake when trying to use his new pizza oven.

Yep it's resin filled pine or whatever scraps lumberyards have left over. Forget the "fragrant smell of pine" it doesn't quite work that way on BBQs ;)

Just bought myself one of these:

Dragged a birch log out of the woods at the end of the road (they periodically thin it out).

Chopped a nice big chunk of wood, about the width of the Weber chimney, and put it on top of a full chimney of lump.

Job's a good un, I reckon.

The amount of smoke coming out of the BBQ was fantastic, especially as I was grilling not smoking. Did dry-aged rib-eye steak directly over the chimney on the cast iron grate from my Weber Q, then put the coals in the BBQ and put on a couple of lamb chops, a whole chicken rubbed with a sweet + spicy rub sitting on the Weber poultry roaster, and a pack of Sainsburys Ultimate pork chipolatas.

By the time we'd finished the steak + lamb chops the whole chicken was done, it must have taken about half an hour. It was all absolutely fantastic, and the meat juices sitting in the roaster were delicious.

Haven't done a full grilled meat eat for a while, so it was good to cook that today.

There are some oak trees around but abandoned oak logs are not so easy to find. Tomorrow I'll chop up the rest of the log and store it for the future.

guys guys guys,
why dont you make friends with your local treesurgeons, as an ex-one myself we used to cut down and prune a wide variety of trees and shrubs, if you make it worth thier while, you will get what you want!!

just be prepared to travel to them and pick it up at short notice, and take whatever goodies you need to make a deal :D
