A Couple of questions

Hi All
I have recently had my Weber 57cm one touch premium & done Beer Can Chicken on it twice now,both times turned out great.I used a M&S whiskey flavour wood chip.
First question is,the chickens i used were a small & a medium size both touching the lid,any advice on this? is there a part to higher the lid up,like a spacer ring? or any other technique ?
Second,i love the flavour of the BCC,what else is an easy newbie meat to cook in this way?

Third Question,are the Superfast Thermapens,a good starter thermostat or should i be looking at something else?
