Smoked fried chicken wings

I subscribed to the 'BBQ Pit Boys' YouTube channel a while ago and saw a video yesterday where they smoked then fried some chicken and thought I'd have a go

They soak the chicken in buttermilk first before grilling, for a bit of colour, then smoking for the taste (they only took a few minutes for this part, as it will be cooked properly when smoked)

Once they have done this they put the chicken back in the buttermilk for a while

They toss it in a flour mix then fry it

I've never fried chicken before and it was nice, a long way off KFC and others but they've been doing it for years

Google the guys for the receipe. I did add some paprika and other things to get a bit of a kick, and I'm just having a go at another batch which I had added a pepper, spice and something else mix from Sainsbury's, will report back

DDD showed a restaurant doing this with halves of chicken, personally I finish mine off on a hot grill for health reasons (and I'm too darn lazy to get the fryer out ;) )

I love a lot of their videos - not sure about this one, though.

A great way to fry chicken is to poach it in the milk/buttermilk (after an overnoght soak) fopr 20 minutes. Then coat in the seasoned flour and flash fry for 2 minutes.

An alternate way is to coat it in the flour, flash fry it for 2 minutes, then bake it in the oven, or on the barbecue, of course.
