I extend a hearty hello to my ancestors home country . My father`s family hailed from England and I have of late thought about moving back from whence my ancesters came from. My name is Walter Brooker and I live in the USA , in the state of South Carolina , in a small town named Denmark. I am a third generation BBQer , I learned about BBQ from my father as he did from his and so forth. My wife Niki and I have formed our own BBQ comp team called Squeel Appeal , we specialize in Boston Butts , Spare Ribs,Baby Back Ribs, Chicken Thighs , and Brisket. Right Now we use mainly Weber WSM`s for cooking at comps , but have plans to upgrade to a pit cooker with reverse flow smoking capabilities. We use the low and slow method of doing BBQ. We use Kingsford Brikets and hickory chunck wood. We also make our own sauce and rub.

Hi Walter,
Did we split a beer with yourself and your wife at the Royal? Were you the guys with the Rotisserie modded WSM?

Hiya Adie sorry that was not us , still just doing compos with in the State of South Carolina honing our skills , but who knows and I always carry enough beer for guest. I usually save that for before we start the processing and after turn ins during that time we stick to water, coffee, sweet iced tea and sodas. Way to easy for me to start liking the taste of the beer then its down hill from there, LOL!!!
