Ive got two briskets and two pork collars.
Doing it in two lots with a few beers in between.
Got to take advantage of this lovely sun.

Getting very jealous now! Want to be out cooking but I'm still waiting for bits to be made for my brinkmann, ah well suppose the oven will have to do

Well it's pretty cold but as I'm quickly discovering any weather is smoking weather!
Thought about getting a Brinkmann, their prices are very reasonable. Are you doing many mods?

I managed to get it for £40 brand new

No smoking here planned this weekend, but i did grill up some awesome wagyu rib eyes on my kettle with my new GrillGrates last night.
They were so good i've not been able to stop thinking about them since, so i'll defiantly be getting some more of these.

They look great, mine is medium rare next time you're making them
If ribs are breaking apart when bending they're done, right? (Maybe over-done..?)

So, do I take them off even though they're only just on their final "sauce" period, or leave them in and let it all caremelise etc?
