Hi.
Did ribs and brisket for the rugby yesterday. Ribs for halftime and the brisket for the end.
1st Brisket I have attempted.
Anyway ribs got eaten as I was getting the camera, managed to get some for me.
Brisket before and after 3.4Kg.

Brsiket took 10 hrs with the WSM temperature variable between 225F and 260F. The wind was very cold and gusty.
The finished article, home made Focaccia and a tangy salad. Went down a treat with a few Peroni...
