Pork Butt some pics

Started trying different rubs and tracked down some Chipotle chili power online so had to cook something with it......

finished the crackling in the over but left the butt on for 14hrs

In Jamie Oliver's America book there's a good recipe for pork cracklings. Did this last time I cooked a Butt and they were amazing. Get the butcher to take the skin off for you to save hassle.

That pork looks good. Nice work!

Take the skin off yourself, it's not difficult and will improve your knife skills, PLUS you get to decide just how much glorious fat you leave on the meat.

This was the front half of the butt that I skinned myself;

Could not agree more old chap 8-) . Besides if you don't DIY you don't learn and may as well pick up the ready cooked packs from the supermarkets :D

Yeah your right.

Next time I'll get a live piglet, rear it, slaughter it when ready, butcher it and then cook it. :roll:

I won't know how to BBQ until then!! :)

The bloke had just cut the Butt from the caracas and trimmed it so it wasn't too much for him to remove the skin and leave quarter inch of fat!!

While you old boys are playing butcher I'll be making my own rub, mop and sauce, getting the fire going and making my own Coleslaw.

More than enough to keep me busy!! :lol:

Presumably from your own grown onions, carrots, cabbage eggs from your own chickens and oil from your small holding of oil seed rape?
You don't HAVE to do everything yourself but some things are more satisfying to do oneself ;) :lol:

p.s. with the piglet get two and I'll pay for it but we'd have to butcher our own 8-) :lol:

I'll swap a piglet for two dozen Cabbage eggs! Not managed to get the chickens to lay those yet!
