Sunday brunch on C4

Hi Folks,
Was watching the C4 cooking show yesterday with Simon Rimmer and Tim Lovejoy. They have ventured into Kitchen BBQ before and yesterday did a brisket.

Found the recipe most odd, as from what I could work out they made up a bucketful of BBQ sauce and dumped this on the raw rubbed brisket and then gave it 3-4 hours wrapped in foil.
Again from what I can work out it pulled nicely and the guests were making those strange carnal noises that only well cooked beef can ellicit.

Thought the recipe strange as I thought the rendering fat going into the sauce would not be so good and the concentrating down of the sauce with such a long cook would also not be a good thing. Did anyone else see the show and could shed some light on what they were up to.

Think they also asked for folk to send in Pics of their brisket next week, so I am hoping some f you brisket meisters out there can show them the true way.

Also had a BBQ geek moment when simon referred to the edges of the brisket as "burnt ends" "nonsense!! I replied, those are not burnt ends sir........Sad really........
