Short Beef Ribs

Did a search but the words were too common to produce results. Just wondering what the situation for buying short beef ribs in the UK. Is it difficult and confusing like some of the other US orientated cuts that we take recipes from ? I'm wanting to give them a go on my WSM - hoping they might be available at Bookers or readily available at local butchers ( expecting them to give me a confused look like they have done with other cuts I've asked for ) ?

Think one of the most valuable investments you can make is to find a good butcher. I get the bookers /macro thing for when you need a ton of meat but for me nothing beats the skills of a good butcher.

I am lucky that we have a great one just around the corner, who understands the cuts or is happy if you hand him a picture off the interweb.

I did that last summer, and ended up with some fine pieces of meat and an unexpectedly enormous food bill ! I'm not against approaching your local butcher, I just wondered how in key they were with 'short ribs' before even apparoaching them. Asking for brisket, bone in pork shoulder and various other items seem to emit a response of incredulity along with decent final results. Havent been in in 9 months,. hopefully they still remember me as the £150 + guy

I was very lucky, when I first asked for a flat brisket, he remarked "hope you get some proper burnt ends" thus showing he was "in the know"

In terms of cost, that also can be a factor but the one I have now is usually a bit cheaper than the supermarket. Another tip is to look for a butchers in or near a diverse ethnic community, a friend of mine uses a butcher in the middle of a large African / north African community. His butcher found that he was being asked for different cuts than he was used to selling so went back to butchering whole beasts, this made him very ammeanable to cutting bbq joints to otder and not charging the earth.

Too many butchers buy prepacked meat which is great if it's the cut you want. It also allows them to offer good prices but it makes it expensive when out of their comfort zone
