Big supermarkets - Pork Shoulder?

Hi folks,

I'm planning a bit of a feast on Sat and am looking for some bone in pork shoulder. It seems that ASDA, Tesco or Sainsbury's only do boneless.

Where do you buy your meat? Surely the local butcher is much more expensive? Or is it worth it?

I always use a local butcher. Simple reason is that in the main I get what I ask for, can't say that I find the cost prohibitive either

All of my local butchers are priced competitively with the supermarkets. Sometimes Asda is a bit cheaper, sometimes the butcher is. If I'm honest the butcher works out a little more expensive overall but as Robin says, if you hav a good one you will get exactly what you want and that is a valuable fact.

Tesco do sell bone in shoulders, they cost about £3.50 per kg and are around 2.5kg in size plus cook up ok, but there is not a huge amount of meat on them, you'll only end up with about 1kg of end product.

I've been cooking these to test out some new flavours, but when cooking for home or friends i'll always get all of my meat from the butcher.

My local butcher is much cheaper than a supermarket, I think I paid around £8 for a 3.5kg shoulder last time I picked one up so it's worth hunting around

When you do see your butcher be aware that this could be the start of a wonderful relationship, he may not know exactly what you are after but gentle coaching will produce results in the future.

Yeah, you know you BBQ too much when your butcher hands over bags of meat and tells you "Just pay next time you're in" :D

Can I ask why you need bone in? To my way of thinking a boneless joint has less waste, the dog may go hungry though.
