Over the last couple of weeks I have been watching a delightful programme presented by the highly rated chef Raymond Blanc. I just watch his episode on Grilling and BBQing and was very pleased with his take on the style of cooking that we all love. Please enjoy it for yourself.

Re: Raymond Blanc take on BBQ
Hi,
Well there wasn't too much in there that I recognise as BBQ, now this isn't me being a lo and slo purist cos I am not, but almost none of it seemed to be about the BBQ or the cooking more about the marinating etc etc.
Frankly I was shocked and dismayed, as to my wifes eye he was not doing anything on the Raymond Blanc Gourmet Kettle he was selling via John Lewis a couple of seasons back but instead, if she were not mistaken, wielding a big Green Egg. Seems even the celebrities chop in their crap endorsed tat for a proper piece of kit in the end!
Cheers

Have to agree Tiny, I've yet to see any chef, except Brian Turner, use any of their celebrity endorsed products.

Keith,
I think even Mr Turner is guilty of just taking the money. A few years ago I was on a Fly be plane to Dublin when I was urged to try one of the sandwich range from celebrity chef Brian Turner. As the company was paying why not eh?
"so what do you have?"
"We have a BLT, a chicken salad and for the vegetarians an egg and cress"
Wowsa! do those things even go together? And for only 6 quid......I had to try the BLT to see what kind of celebrity chef spin had been added, it contained something I later found to be iceberg lettuce and something referred to as "cheap mayonnaise" as well as the usual bacon and tomato.
Funny thing is they have dropped Mr Turner in favour of another Div 2 celebrity chef, bet you cant guess the 3 sandwich types available on board....
yes...same as above.
Ah well just guess I am jealous, I would take the free money if offered.....
Cheers

I didn't mean that he hasn't jumped on the bandwagon, just that he promoted Analon pans and actualy used them in his programs as opposed to Mssrs Rhodes & Martin both of whom "produced" knife ranges, and Mr Rhodes used them in one series, Mr Martin has yet to be seen with his. Actually Gary's range was quite good, when one got damaged I contacted his "people" who couldn't even tell me who had manufactured them
. Mind you I don't know how they make time for their TV shows as they are hopping on and off ferries and cruise ships all day long

Re: Raymond Blanc take on BBQ
Just watched this - enjoyed it. But....
Love what he did with the pork steaks - just showed the importance of the marinade in terms of breaking down the meat. Will try that.
Thought his grilling technique on the kettle left a little to be desired - but I bet the chicken tasted good none-the-less. Will try this, but cooking the whole thing on the kamado rather than starting in an oven - although understand why a commercial kitchen would do this.
Was surprised at how little he used the Kamado - for him, BBQ was grilling. I was hoping he would show the benefit of the low & slow also...
I have yet to try grilling fruit - his dish looked amazing - so will try that also.
Might even be tempted to try the Aubergine salad - albeit grill it on the BBQ rather than on the gas ring.

Banana leaves? Banana leaves???
You surely have to have some kind of crazed mind to expect folk to have ready access to Banana leaves
Regardless, I went to Tesco and tried to find banana leaves. Wasn't in the salad isle. Tried the veg isle, no go! Asked customer services if they had banana leaves- the lady fell about laughing. After she picked herself up from the floor, she pointed out that people often asked where the bananas are kept, but no customer had ever been so crazed as to ask for banana leaves before now.
Bought some tin foil instead

Go to your local Chinese supermarket, they sell them frozen, remove as needed. I struggled until I found this out.
