Mess in the UDS

Gents,

How are others cleaning up the fat etc that collects in the bottom of the drum during a cook?

I have used drip trays to try and limit the amount of mess, is there any way to ensure no mess at all? Achieving that is easier when cooking lumps of meat like pork shoulder and whole chicken, but when cooking three racks of ribs for example, the drip tray would be the same size as the cooking grate.

I was lucky enough to be given a SS round container which has a 1in lip running around it, which fits in the drum with about 2in to spare all the way round.
This acts as a ash catcher and also catches most of the drips.
