ProQ Excel - Clay Saucer

Hi everyone

I've seen alot of talk about using a clay saucer to achieve higher temperatures and a more steady cook in the ProQs and WSMs, and I was just wondering where people get the clay saucer from? When you use it, is it a replacement for the metal water pan, or do you put the clay saucer into the metal water pan? All help is greatly appreciated :)

Two main reasons. It helps achieve higher temperatures and secondly it is more stable as you don't suffer the effect of the water heating up and then evaporating.

You would use it inside the water pan covered in foil.

Rather than a clay saucer I put sandpit sand in the water pan, bit of foil over the top to keep it clean. Works really well.

I'm not convinced that the clay saucer is even necessary. A foiled over pan, I suspect, would work just as well without the saucer

I found that the extra thermal mass helped to keep temperatures more stable, especially when opening the lid or door etc...

Thanks for the info and tips guys. Where would I get a saucer suitable to use in a ProQ Excel 20?

Homebase used to have 4 or 5 different sizes, they're used under plant pots.

Ah cool so it's as simple as that? I wasn't sure whether it was some bespoke thing that I was looking for. If that's how easy it is to get something to use for it, then I'll pick one up and give it a go :) I might take the water pan in with me to get the correct size :)

That's not a bad idea at all, if you find one that fits perfectly buy two!!

That's exactly what I did. I got strange looks from the people at the center but eventually found the perfect fit. Make sure its the unglazed orange ones
