Leg of lamb recipes

Hi,
I smoked a leg of lamb at the weekend after following a recipe from the amazing ribs website

Luckily, the lamb was cooked perfectly for me however I'd like to try this with different rubs.
Does anyone have any good moroccan type recipes that would work with lamb?
Also, which wood would you recommned using to smoke the meat?

Classic Moroccan lamb spices for me is the harissa mix that you get in the Merguez sausage.
I make this up in batch quantities so feel free to trim down:
Salt 360g
Black pepper 60g
Smoked paprika 150g
Chilli powder 90g
Cumin 90g
Garlic Powder 60g
Onion Powder 90g
Dependent on how spicy you like it you can flex the chilli content.

Hi
Isn't it strange that most of the rubs out there start from the same basic ingredients!
But here is something that you may not know. When you read an American recipe and it quotes X Tbls of "Chilli Powder" is not actually straight Chilli powder that they use and as we in the UK would know it. That's why when we try to follow a US recipe it usually blows off your head. US basic Chilli powder is a blend unless it states exactly what the chilli is, Ancho, Habanero, Chipotle etc. here is an example of "American Chilli Powder"
1 tablespoon cayenne pepper,
2 tablespoon paprika
2 tablespoons ground cumin,
1 tablespoon oregano,
2 tablespoons garlic powder,
2 teaspoons chipotle chili powder
2 teaspoons ancho chili powder

Further to that - any time you see 'Paprika' in an American recipe, it refers to SWEET paprika - not the spicy stuff which seems to be standard in the UK.

I think many recipes around the world start with the same ingredients. Onions has to be the most common.
