Picked up a load of cherry logs today, so question is a generalisation for all log burning....bark left on or taken off

I think its a preference thing. The log burners in the states such as Tuffy Stone, Johnny Trigg, Myron Mixon, Rod Gray etc that are using offsets burn them with it on and they seem to be outstandingly successful.
I would try it both ways and see what your preference is. Unless the wood has been treated but then again I don't think I would use it at all as I'm not familiar with the penetration of pesticides.
