I have been given a sample of Oak by a friend of mine to do a trial smoke with. It’s been seasoned, so that’s a good start – but there is bark on it. :?
If I was to leave this on, I guess it could add something nasty to the flavour?............ or would it really make no difference at all?

I’m inclined to remove it, but if it really makes no difference I will leave it on.................I vaguely recall Steve telling me at the cooking class that it really makes no difference at all.............although don’t hold me to that Steve!

the bark aint in bad shape, but I would abviously remove any manky an flakey bits.......mould etc.
The timber itself, is solid and of good colour and appears to be bug free............will just try it I guess......
oh and we have the good old PRO-Q Excel :)

cool, thanks Doc - I'll remove what I can easliy and any food I smoke I'll give to the neighbours - if they complain of a bad taste then I know not to do it next time! :lol:
