Help! Brisket fail

Postby Beebebbq » 07 Jun 2018, 20:54

Hi fellow enthusiasts

Apologies, I've not introduced myself on the forum yet, however need advice soon as possible.

Not completely new to smoking and bbq, nailed my beef ribs, pulled pork and baby backs. However only ever done brisket once before (badly). I'm cooking a brisket tomorrow for some friends and family. Bought it from a well known online butchers and it arrived rolled. Although a decent size, upon unrolling its turned out to be quite a thin flat, with what I can only describe as a thin flap of meat on top with a very thin fat cap.

I'm thinking of putting a mild rub in the void of the "flap" and smoking it re-rolled as I'm concerned it will turn out dry and uneven.
